Blue Apron Meal Service – My Thoughts

Two weeks ago I received my first delivery of Blue Apron ( and I wanted to share my thoughts.

For $60 a week a box is delivered to my front porch every Friday full of enough fresh ingredients to make three meals for two people.  For me that works out to 3 dinners and 3 lunches a week.  All the meals so far have taken 20 – 45 mins to prepare utilizing my moderate cooking skills.

My first impression . . . the food is great!!  I started with a Beef Lo Mein and since then discovered cooked Kale and leaned how to make a great simple red cabbage slaw.  Next I’m going to try catfish for the first time.  Here’s the description of the meal from the Blue Apron website.

Crispy Buttermilk Catfish

with Roasted Delicata Squash

To achieve the deliciously crispy crust on tonight’s Southern-style catfish, we’re coating our fillets three times: first, in a zesty blend of paprika, coriander, flour, and more, then in buttermilk, then once more in the spice blend. The catfish makes a fitting centerpiece for sides of roasted delicata squash and sautéed kale—yours may be dark green lacinato, green curly, or red. A creamy sauce sweetened with a touch of pickle relish is perfect for drizzling over the catfish and squash.

I can tell you that the first six meals have all been amazing.  I’ve included a slideshow of finished products and recipe cards below.  I highly recommend you try it out!
